We are so excited to share this Little Lifts Pumpkin Soup Recipe with you!

The perfect recipe for when you want a warm hug in a bowl. This Autumnal Roasted Pumpkin Soup is a great way to make the most out of your pumpkin carving.

High in protein and calories, this recipe is a nutritious bowl of goodness when receiving treatment for breast cancer. The yummy combo of creamy pumpkin and gentle spices is great for changing taste buds and easy to swallow.

Ingredients:

1 pumpkin

l onion

3 carrots

200ml water

1 can of coconut milk

2 bay leaves

vegetable stock cube

3 gloves of garlic

A pinch of organic mixed herbs (from our Little Lifts Chemotherapy Box)

A dash of chilli oil (from our Little Lifts Chemotherapy Box)

1 teaspoon of ginger paste

1 teaspoon of turmeric

1 teaspoon of paprika

1 teaspoon of honey

Salt and pepper

 

Serves 4-6

Method:

First, de-gut the pumpkin and chop into pieces. Place onto a baking tray lined with foil. Add a dash of chilli oil, a pinch of mixed herbs and some salt and pepper. Add the garlic gloves.
Put in the oven at 200 degrees for 25 minutes.

Now, boil the carrot and onion with 200ml of water. Add the pumpkin and garlic once roasted.

Then add the turmeric, ginger and paprika. You may wish to change the amounts of these depending on your taste buds.

Add the coconut milk and bay leaves and leave the soup to simmer.

Separate your pumpkin seeds and place them on kitchen roll to dry them. Add honey and a dash of chilli oil.

Place the foil on a baking the tray and add the pumpkin seeds. Place in the oven at 180 degrees for 10 minutes. Remove from the oven and mix seeds. Roast for a further 5 minutes

Take the soup from the heat and allow to cool. Remove the bay leaves from the soup and blend until smooth.


Time to serve! Put your soup to a bowl or mug, we choose a pumpkin one for a fun Autumnal touch, add some pumpkin seeds and enjoy!
